Homemade Liquid yogurt – drinkable yogurt

If you have tried out these two yogurt recipes in my previous post, then you already know how easy it is to make yogurt at home with milk powder and also how rich and tasty it is.
And for our new friends , welcome on board. Believe me , you won’t ever want to buy yougurt from the stores or street vendors ever again once you have tried and tasted this authentic homemade yogurt recipes.

In my previous posts, I showed you how to make thick yogurt with milk powder or powdered milk, and also how to always have yogurt starter to make yogurt anytime.

But today we are going to be making liquid yogurt; the type you drink straight from the bottle, with a straw or if you’re fancy, with a glass cup. Yassss, that one!

It’s actually quite easy and NO FAIL! So here’s how I prepare my homemade liquid yogurt with just 3 to 4 ingredients you already have in your kitchen pantry.

Ingredients for liquid yogurt

  • 2 cups(250ml) lukewarm water
  • 6 TBSP milk powder
  • 40 grams(3 1/4 TBSP) sugar/sweetener (optional)
  • If using liquid milk
  • 2 1/2 cups whole milk
  • 60 grm (4 TBSP) Natural yogurt
  • 40 grams(3 1/4 TBSP) sugar/sweetener(optional)

WATCH HOW TO MAKE THIS LIQUID YOGURT BELOW

1. Pour 2 cups(250ml) of lukewarm water into a saucepan and mix in the 6 tablespoonful milk powder.

If you’re making use of whole milk simply pour 2 1/2 cups of that into a saucepan(don’t add water if using whole milk)

2. We’ll also be adding about 3 tablespoons sugar or any sweetener of choice, but feel free to omit it if you want a natural yogurt and mix until combined.

Now we’ll let the mixture heat up until it is just about to boil

The heating helps to sterilize the milk and kill any harmful pathogen

3. So now, we’ll take the milk out of the heat and let it cool to about 44ºC(hot enough that you can deep a finger without getting burnt)

4. The next step is to Mix in 4 tablespoons natural yogurt until well combined

5. Carefully pour the mixture into a container of choice and seal tightly.
(just for convenience in the video I chose to leave mine in the pot)

I also took an extra step and covered it with a huge warm blanket, but you can also seal with a clean plastic bag or foil paper

6. Place anywhere around your house that gets a little heat or in a warm oven or a food/thermo flask. This yogurt needs to stay pretty warm and undisturbed for 6 hrs so that it can set properly so don’t expose it to a high heat or it will turn out grainy.

7. After 6 to 8 hrs you’ll have a slightly thick but runny yogurt, all you need do is stir it properly to make it as runny as the consisitency you desire.

Note: you can save some and use it to start off a new batch , no need to buy yogurt at the stores again.

Easy Orange Juice Cake (Orange cake)

I bet you’ll agree with me that with hundreds of delicious cake recipes out there, it is almost impossible to have just ONE favorite cake recipe. And even when you thought you have finally found your ”go-to” recipe, you suddenly discover another one that also becomes a keeper. That was exactly what happened to me when I came across this Orange juice cake(orange cake).

I found myself repeating it so often that, as the aromatic smell of the orange cake filled the house, I wondered what took me so long in sharing this recipe with you. Well, no more delays, here’s my favorite Orange juice cake recipe, and hope you enjoy it.

Ingredients:

For the Cake

  • 375 gr Flour
  • 250 gr Sugar
  • 100 gr Butter(softened)
  • 3 Eggs
  • 16gr Baking powder (2 tablespoons)
  • 60 ml Milk
  • 125 ml Fresh orange juice
  •  1 tablespoon Orange peel (use a grater to peel the orange skin)

For the Orange juice syrup:

  • 200 gr Sugar
  • 150 ml Orange juice
  • 80 ml Water
     Tip:
    a.  You can replace one of the eggs with plain yogurt, if you want to give it an extra boost.
    b.  The orange juice syrup is optional but makes the cake really moist.

Steps:

1. Preheat the oven to 180º C and grease the cake pan lightly with butter and dust with flour.

2. Beat the softened butter and sugar together until creamy.

3. Now add the eggs, one at a time. Then add the orange juice and milk. Mix together and add the orange peel.

4. Gradually sift in the flour and baking powder and mix together until well incorporated.

5. Pour the mixture into the prepared cake pan and bake in the preheated oven for 35 to 45 minutes or until a toothpick dipped into the cake, comes out clean.

Tip: the dipper the cake pan the longer it will take to be done.

Take the cake out of the oven, leave to cool for 5 minutes, then turn over onto a rack and go ahead and prepare the orange juice syrup.

To make the Orange cake syrup:

  • Mix the water, orange juice and sugar in a saucepan.
  • Heat up on low heat, stirring until the sugar dissolves.
  • Simmer for 3 minutes and put off the heat.
  • Finally poke the top of the cake with a tooth pick and pour the hot syrup over the hot cake. Leave to sit on the table for 20 minutes (so that the cake can absorb the orange syrup and cool completely).
  • Then serve and Enjoy.

Extra Tip:
 To make this tube shaped cake without a tube pan, simply grease the body of an empty peak milk  or derica can, fill it with stones, beans or sand., then seal the top and place it in the center of a round baking pan
(just as I did in the picture in step 5 above)
When the cake cools, gently remove the can and what you have is a tubed shaped cake….Easy Right?

Carrot Cake – simple carrot cake recipe with cream cheese frosting

A few years ago I shared a carrot cake recipe that I truly loved, and many of you also enjoyed making the cake. But today allow me to introduce to you my new an improved carrot cake recipe from scratch.
This one, like many of our cake recipes, is a no-fail, beginner friendly, crowd-pleasing, finger-licking and of course easy to prepare carrot cake.

I also included a simple but sweet cream cheese frosting to go with the cake.

Honestly, except you really want to, you truly don’t need the cream cheese frosting, ‘cos this carrot cake shines on it’s own, and do not need any frosting to make it stand out.

When it comes to cakes, I always make sure to be as detailed as possible, so I included step by step photos and a video recipe, so that you can follow along and not miss a step.

Believe me, I have had my fair share of failed cake recipes and don’t want you to do the same, so here we go, my trusted and ever dependable delicious moist and addicting carrot cake recipe.

Let me also mention that the carrot cake batter can be made in any cake pan of choice including into carrot cake cupcakes and carrot cake muffins.

So that’s for that, here’s how to make the best carrot cake ever.

Ingredients for this yummy carrot cake dessert:

  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon nutmeg
  • 3 extra large whole eggs
  • 1/2 cup white sugar
  • 3/4 cup brown sugar (or use all white or all brown)
  • 300ml plain vegetable oil
  • 100ml milk
  • 4 cups grated carrots (about 5 to 6 large carrots)
  • 1/cup raisins(optional)
  • 1/3 cup nuts(I used almonds nuts)
  • 1 teaspoon vanilla extract

In a large bowl combine the all purpose flour, baking soda, baking powder, salt, cinnamon powder and nutmeg powder .

Mix well with a whisk and at the same time we’ll be aerating the flour as we whisk.
You can also pass the mixture through a sieve to aerate the flour
Now we’ll set the flour mixture aside.

– We’ll go ahead and line our baking pans and also preheat the oven to 350ºF or 175ºC

– Into another large bowl, we’ll add 3 extra large whole eggs, white sugar, brown sugar
(or use all white or all brown) and 300 ml plain vegetable oil and mix to combine

– We’ll gradually add in the flour mixture and mix until well combined.

– To get a carrot cake that isn’t so dense and heavy, I like to thin down and also enrich the carrot cake batter by adding about 100ml whole milk, mix gently until well combined
(if you ‘ll rather not use milk, you can use 4 – 5 eggs instead of the 3 eggs that I used).

– Add the grated carrots(I used about 4 to 6 large carrots, but you can use less if you want to.

– We’ll also be adding the raisins, nuts and vanilla extract and stir to combine– feel free to add any type of nuts you like. You can also omit the nuts and the raisins as well, but they take the cake to another level.

– Pour into prepared pan and bake in the preheated oven at 350F(175C) for 30-45 minutes or until toothpick

For the cream cheese icing
– 250 gr icing sugar
– 90 gram butter (room temperature)
– 90 grams full fat cream cheese
– 1 tsp vanilla essence

– add butter and cream cheese to bowl and whisk until creamy and smooth
– gradually add in the icing sugar and whisk until smooth
– add the vanilla essence and whisk until combined
– then pour over cooled cake and set in cool place to set
